I know that these are the correct offset but what do the other numbers mean? Also they are 18" with 5 stud pattern
18x7.5, 5x114.3 offset 45
18x7.5, 5x100 offset 48
18x8, 5x114.3 offset 45
18x8.5, 5x100 offset 45
etc
Which ones would I need?
Either of the highlighted sizes mate

If you are refering to the 5x100 and 5x114.3, then this is the PCD (pitch circle diameter) ie 5 holes with a PCD of either 100 or 114.3. The IS, and a lot of the other jap cars use 114.3 PCD.

All of the above is correct but to put it together to answer your original question
Numbers are
1 - Rim diameter in inches 2 - Rim width in inches 3 - Number of studs 4 - PCD in MM (4" or 4.5" in old money)
