I don't know if there is a 'best' one to use, but I think the 2JZ-GTE certainly seems to be the most versatile as I've seen them dropped in loads of high performance cars. Very tuneable.

Also, if your still in need of more information. There's a thread in the import section with a guy wanting to do the exact same thing with his Altezza. Post number 10 in THIS gives some very good info on the parts/work required to do the swap. :)

if your seriously planing a JZ convertion once you have priced it up, double that amount and thats close to what it will cost.

trust me im well over budget on mine already!
