Lexus es250 temperature gauge very cold at the start

Temperature hand on the gauge goes to directly in the middle in the past, now only after 7-10 minutes, Thanks so much

Isn’t this normal? I tried running with no thermostat in the old days and temp was related to speed!

I would expect if the thermostat was stuck open the car would take ages to get to temp, if at all.
